Cooking Secrets
- Let the mixture rest for a few minutes to allow chia seeds to absorb moisture and thicken.
- Press the mixture firmly into the pan to help the treats hold together well.
Step 1
Soak the almonds in 2 cups of water with a pinch of salt. Let them sit for at least 8 hours or overnight to soften. Once soaked, drain and rinse the almonds a couple of times.
Step 2
Blend the drained almonds with 2 cups of fresh water until you get a smooth mixture—this should take about 2 minutes. Pour this almond blend into a large bowl.
Step 3
Heat your oven to 350°F (175°C) and lightly grease an 11x15-inch baking dish with cooking spray.
Step 4
Now, stir in the flour, chocolate chips, olive oil, chia seeds, honey, powdered peanut butter, cinnamon, vanilla extract, and 2 teaspoons of salt into the almond mixture. Mix everything together until you have an even dough. Spread the dough evenly into the baking dish, smoothing it out with a fork or spatula.
Step 5
Pop the dish into the oven and bake for 30 to 40 minutes, until the bars are cooked through and have a nice golden color on top. Let them cool for about 10 minutes before slicing into bars. Enjoy!
