- 4 slices turkey bacon
- 2 tablespoons butter
- 1 avocado
- 1 ½ tablespoons lemon juice
- 2 teaspoons minced garlic
- 2 teaspoons ground turmeric
- 2 teaspoons ground cumin
- 2 teaspoons garlic salt
- 1 dash cayenne pepper
- salt and ground black pepper to taste
- 1 small Roma tomato, chopped
- 2 eggs
- 2 slices Colby-Monterey Jack cheese

Step 1
Warm a skillet over medium heat and cook the bacon until it’s just a little crispy, about 5 minutes. Take the bacon out and set it on a cutting board, but keep the bacon grease in the pan. Chop the bacon into small pieces.

In a bowl, mash the avocado and mix in lemon juice, minced garlic, turmeric, cumin, garlic salt, cayenne pepper, and a pinch of salt and pepper until it’s nice and creamy. Stir in the chopped bacon and diced tomato.

Warm the bacon grease again over medium heat. Crack the eggs into the pan and cook them over easy—cook until the whites are set, about 3 minutes, then carefully flip and cook for another minute. Season with a little salt and pepper, then push the eggs to the side of the skillet.
Step 4
Turn the heat down a bit and add the buttered bread to the pan. Toast it lightly, about a minute, then flip each slice and top with a slice of cheese. Spread a good amount of the avocado mixture over the cheese. Cover the pan so the cheese melts and the bottom of the toast gets golden, about 2 more minutes.
Step 5
Once everything’s ready, transfer the toast to plates and top each slice with an over-easy egg. Enjoy!
