Step 1
Cut the cinnamon rolls into about 1-inch pieces. In a bowl, whisk together the milk, eggs, vanilla, and cinnamon until everything is well combined. Slice one banana and spread it evenly across the bottom of a 9x13-inch baking dish, then sprinkle the brown sugar over the bananas. Next, layer the cinnamon roll pieces on top.

Pour the egg mixture over the cinnamon rolls, then gently press them down with a spatula to help the liquid soak in. Cover the dish with foil and pop it in the fridge for at least an hour, or even overnight if you have time.

When you’re ready to bake, preheat the oven to 375°F (190°C). Bake the dish covered for about 50 minutes, until it feels set. Take off the foil and bake for another 10 minutes or so, until the top is golden and a little crispy.

Once it’s out of the oven, let it sit for about 10 minutes. Before serving, slice up the remaining banana and scatter it on top for a fresh finish.
