Step 1
Gently heat your oven to 450°F (230°C) and prepare a baking sheet by lightly greasing it or lining it with foil. In a large pot, mix the water and baking soda, then bring it to a boil.
Step 2
While that’s heating up, roll your dough out on a floured surface into a roughly 10 by 12-inch rectangle. Cut it into twelve 1-inch strips. Take each strip and wrap it tightly around a bratwurst in a spiral, pinching the edges to seal and leaving about half an inch of the bratwurst showing at each end.
Step 3
Drop three of the wrapped bratwursts into the boiling water at a time and let them boil for about 30 seconds. Then, carefully transfer them to your baking sheet and sprinkle with a bit of salt. Repeat this until all the bratwurst bites are ready.
Step 4
Pop the baking sheet in the oven and bake until they turn a nice golden brown, which should take around 12 minutes. Once they’re done, slice each bratwurst into thirds and serve with your favorite mustard. Enjoy!
