Step 1
Melt the butter in a pot over medium-low heat. Once melted, add the marshmallows and stir until they’ve completely melted, which should take about 5 minutes. Then, toss in the Fruity Pebbles and mix everything together until the cereal is well coated. Press this mixture firmly into a 9-inch pie pan and pop it in the fridge for about 20 minutes to set.
Step 2
While the crust chills, beat the cream cheese in a bowl with an electric mixer until it’s nice and smooth. Gradually add the powdered sugar and keep mixing. Stir in a cup of the cereal to add some texture. In a separate small bowl, combine the hot water and gelatin, stirring until the gelatin is dissolved. Pour this into the cream cheese mixture and mix until everything is creamy and well blended.
Step 3
Pour the cheesecake filling over the chilled crust, smoothing it out, then refrigerate for at least two hours so it can set properly. Just before serving, crush the rest of the Fruity Pebbles and sprinkle them on top for a fun, colorful finish.
