Step 1
Fil a large bowl with room-temperature water. Dip one rice wrapper into the water and let it soak for about 15 seconds until it’s soft and easy to bend. Lay the wrapper flat on your work surface.
Step 2
Place a small handful of lettuce leaves across the center, then add a few strips of chicken and some slices of red bell pepper in a row. Leave about 2 inches of space on each side without any filling. Fold in the sides, then roll the wrapper up tightly, starting from the end with the lettuce.

Repeat this process with the rest of the wrappers and filling. Once all your rolls are ready, cut them in half and serve with Caesar dressing on the side for dipping.
