- ¾ cup water
- 1 large tomato, sliced
- 1 (8 ounce) package shredded pepper Jack cheese

Step 1
Lightly heat your oven to 425°F and lightly grease two large baking sheets. In a big skillet over medium heat, warm up some vegetable oil, then toss in the onion and both peppers. Cook them until the onion turns translucent, about 5 minutes. Add the chicken and cook, stirring now and then, until it’s starting to brown—this should take around 7 to 10 minutes. Next, stir in the garlic and let it cook for another minute.

In a small bowl, mix together all the spices and flour—chili powder, onion powder, garlic powder, oregano, paprika, salt, pepper, coriander, and cumin. Sprinkle this seasoning blend over the chicken and veggies in the skillet, stirring well to coat everything. Pour in the water, give it a good stir, and let it simmer until the sauce thickens, which should take about 5 minutes.
Step 3
Lay out your cauliflower crusts on the baking sheets, then evenly spread the chicken mixture over each one. Top with slices of tomato and a good handful of pepper jack cheese. Pop the pizzas into the oven and bake for 15 to 20 minutes, until the cheese is melted and the crusts get a nice golden edge.
