Gently heat your oven to 350°F (175°C) and lightly grease a baking sheet. In a large bowl, mix together the brown sugar, butter, peanut butter, egg, and vanilla until everything is nice and creamy. In a separate bowl, whisk the chickpea flour, cornstarch, baking powder, and salt. Slowly add the dry ingredients to the wet mixture, stirring until just combined. Then fold in the chocolate chunks, oats, and walnuts until the dough comes together evenly. Cover the bowl with plastic wrap and pop it in the fridge for about 15 minutes to chill.
