Kitchen Tips
- Use a sharp cookie cutter for clean edges and easy removal.
- Bake cookies on the middle rack for even heat distribution and consistent baking.
Step 1
In a bowl, whisk together the flour, cinnamon, baking powder, and salt. In another large bowl, beat the butter and sugar with an electric mixer until the mixture is light and fluffy. Add the eggs one at a time, making sure each is fully incorporated before adding the next, then stir in the vanilla extract. Gradually mix the dry ingredients into the wet, using your hands to bring everything together into a smooth dough.
Step 2
Divide the dough into four equal parts, shape each into a round about an inch thick, and wrap them up in plastic. Pop them in the fridge for at least an hour to chill.
Step 3
When you’re ready to bake, heat your oven to 350°F (175°C) and line a couple of baking sheets with parchment paper. Lightly flour your work surface and roll out one piece of dough at a time until it’s about a quarter-inch thick. Use your favorite cookie cutters to cut out shapes, then place them on the prepared sheets.
Step 4
Bake the cookies for 8 to 10 minutes, or until they’re just starting to turn golden around the edges. Let them cool on wire racks before decorating however you like.
