Directions
Gently heat your oven to 375°F (190°C). In a medium saucepan over medium heat, melt together the sugar, cinnamon, butter, and honey, stirring occasionally. Once combined, add the apples and cook them until they’re nice and soft, which should take about 10 minutes. While the apples are cooking, cut your pie crust into 12 rounds—just the right size to fit into a cupcake pan—and gently press them into the cups to form little crust shells. Spoon the warm apple mixture into each crust, filling them about three-quarters full. Pop the pan into the oven and bake until the edges of the crust turn golden and no longer look doughy, around 10 to 15 minutes. Let the mini pies cool a bit before digging in!
