Step 1
Melt some butter in a pan, then add a little oil. Stir in the flour and cook it for a minute or two. Slowly pour in about a cup of milk and keep stirring for a few minutes until it thickens.
Step 2
Add the chopped garlic and onions to the pan, cook for another minute, then season with salt and pepper. Give everything a good mix.

Stir in some mayonnaise (and a splash of cream if you want it extra creamy). Add the shredded boiled chicken and chopped coriander, mix well, then turn off the heat and set it aside.

Take two slices of bread per patty and use a round cutter to cut out circles. Save the leftover bread edges to make breadcrumbs later.

Place a spoonful of the chicken mixture in the center of one bread circle, sprinkle some mozzarella cheese on top, then wet the edges with a little water. Press another bread circle on top to seal it into a patty. Repeat for the rest.
Step 6
In a bowl, mix some flour with salt, pepper, and enough water to make a smooth batter. Dip each bread patty into the batter, then coat it with the breadcrumbs you saved.

Heat oil in a pan over medium-low heat and fry the patties until they turn golden brown and crispy on both sides.
