Chef's Cooking Tips
- Use a high heat on the grill to get a nice char without drying out the meat.
- Turn the wings often to cook them evenly and avoid burning the sauce.
Directions
Cut the wings into sections, tossing out the tips. Season them well with poultry seasoning salt, garlic salt, and a bit of black pepper. Get your grill heated to medium and give the grate a light oiling to keep things from sticking. Place the wings on the grill and cook, turning them every now and then, until the skin turns a nice golden brown—this usually takes about 45 minutes. To be sure they’re done, check that the temperature near the bone hits 165°F. While the wings cook, mix the hot sauce and butter in a microwave-safe dish and heat it for about a minute until the butter melts, then stir it all together. Once the wings are grilled, dip them into the sauce, pop them back on the grill for 3 minutes, then dunk them in the sauce again and grill for another 3 to 5 minutes. Finally, toss the wings in the remaining sauce and serve.
