Step 1
Lightly heat your oven to 325°F (165°C). In a large bowl, toss together the oats, pecans, and almonds. In a separate cup, whisk the oil, maple syrup, and water until well combined, then pour it over the oat mixture. Give everything a good stir so all the oats and nuts are nicely coated. Spread the mixture evenly across two baking sheets.

Pop the sheets into the oven and bake for 12 minutes. Take them out, give the granola a good stir, then bake for another 12 minutes. Repeat this stirring and baking one more time until the granola turns a lovely golden brown. Once done, let it cool completely.

While the granola is cooling, mix the cinnamon and cardamom in a jar or container with a lid. Add the dates, raisins, and cranberries, then cover it and shake well so the spices coat the dried fruit. Finally, stir the spiced fruit into the cooled granola and enjoy!
