Warm your oven to 400°F (200°C) and lightly grease a baking sheet. Toss the tofu in a big bowl with enough Buffalo wing sauce to coat it well, then let it sit while the oven heats up to soak up those flavors. Spread the tofu out on the baking sheet and drizzle a little extra sauce on top, then give it a quick spray with cooking spray. Pop it in the oven for about 10 minutes, then flip the pieces over, spray again, and bake for another 10 minutes or until the tofu feels firm and a bit crispy. While the tofu is baking, place a slice of Swiss cheese on each tortilla and microwave for about 30 seconds until the cheese melts. To assemble, layer tomato slices, a quarter of the baked tofu, and some spinach onto each tortilla, then roll them up and enjoy!
