Step 1
Put onions and chillies in a pan with some water. Bring it to a boil, then cover and let it simmer for about 10-12 minutes until the onions are soft. Once done, take it off the heat and blend everything into a smooth paste.

Heat some oil in a pan until it’s hot. Add the chicken and fry it until it turns golden brown. Sprinkle in some salt and give it a good stir. When it’s cooked, take the chicken out and set it aside.

In the same pan, add ginger-garlic paste and cook it for a minute until fragrant. Then add the onion and chilli paste you made earlier and cook for another 1-2 minutes.

Add the fried chicken back into the pan and mix everything together.

In a separate bowl, whisk together yogurt with cumin powder, pepper, coriander powder, and a pinch of salt.

Pour this spiced yogurt mixture into the pan with the chicken and stir well. Cook everything gently until the oil starts to separate from the sauce.
