Step 1
Lightly heat a large skillet over medium heat. Cook the sausage patties, flipping them often, until they’re browned and cooked through—this usually takes about 10 to 12 minutes. Once done, transfer them to a plate lined with paper towels to drain any excess grease.

While the sausage is cooking, lightly spray a small 3-inch frying pan with coconut oil spray and set it over medium heat. In a bowl, whisk together one egg, a pinch of cayenne pepper, and some salt and pepper to taste. Pour the egg mixture into the pan and let it cook undisturbed for about a minute and a half, until the bottom is set. Flip the egg carefully and cook for another minute or so until it’s fully cooked. Take the egg out and repeat with the remaining eggs.
