Step 1
Peel and chop 3 potatoes, then put them in a pot with water and a pinch of salt. Bring it to a boil over medium-low heat until the potatoes are soft.

Drain the water and mash the potatoes well while they’re still warm.

Season the mash with salt, pepper, chili flakes, chopped coriander leaves, a spoonful of cornflour, and a little oil. Mix everything together until combined.

Take small handfuls of the mixture and shape them into balls. Use a knife to make shallow cuts on the top of each ball.
