Step 1
Place the chicken breasts in a pot and covering them with about an inch of water. Bring it to a boil, then lower the heat and let it simmer, covered, until the chicken is cooked through and no longer pink inside—this usually takes around 10 to 14 minutes. You can check by cutting into the thickest part or using a thermometer; it should read 165°F (74°C). Once done, drain the chicken and let it cool for a bit until you can handle it easily, about 5 to 10 minutes. Then, cut the chicken into small cubes.
Step 2
Put the chicken cubes in a blender and pulse them until the texture is soft enough to scoop with a spoon. Lay out your wonton wrappers on a clean surface. Spread about a teaspoon of tzatziki sauce in the center of each wrapper, then add a teaspoon of the blended chicken and a teaspoon of feta cheese on top. Fold the wrappers over and press the edges to seal them tight.
Step 3
In a small bowl, whisk together an egg with a little water, then brush this mixture over the tops of the wontons. Heat oil in a deep fryer or a large, heavy pot to 350°F (175°C). Fry the wontons in small batches for about 2 minutes, or until they turn golden brown and crispy. Once cooked, place them on paper towels to drain any excess oil before serving.
