Tips To Improve This Recipe
- Use a non-stick or well-seasoned pan for even searing and to prevent sticking.
- Don’t overcrowd the pan; cook the fish in batches if needed to maintain a crisp crust.
Step 1
Warm a large pan over medium heat for a couple of minutes. Pour in 2 tablespoons of oil, then add the panko breadcrumbs. Stir them around until they’re nicely toasted and golden, about 2 to 3 minutes. Toss in the garlic and cook just until it smells amazing and the breadcrumbs turn a deeper golden brown, which should take another minute or two.
Step 2
Transfer the toasted breadcrumb mixture to a small bowl, then mix in the lemon zest, seafood seasoning, and a pinch of salt. Give it a good stir and set it aside for now.
Step 3
Wipe out the pan, add the remaining oil, and season your mahi mahi fillets with the rest of the salt. Place the fish in the pan and cook over medium heat until the fillets are opaque and cooked through, about 2 to 3 minutes on each side. If you have a thermometer, the thickest part should read 145°F (63°C).
Step 4
Once the fish is done, serve it up with the flavorful breadcrumb topping spooned over the top. Enjoy!
