Why This Recipe Works
Cooking Advice
- Toast the cashews lightly before adding to bring out their aroma.
- Cook the chicken over medium heat to keep it juicy and tender.
Step 1
Heat some oil in a pot and toss in the whole spices. Let them sizzle for about a minute. Then, add the chopped onions and cook until they’re soft and slightly golden, around 2-3 minutes.
Step 2
Throw in the whole red chillies and cook for another minute. Next, add the ginger-garlic paste and cook it all together for 1-2 minutes until fragrant. Stir in the tomato paste and let it cook for 3-4 minutes.
Step 3
Add cumin seeds, chili flakes, red chili powder, salt, and yogurt. Mix everything well and let it cook for a couple of minutes to blend the flavors.
Step 4
Sprinkle in the coriander powder, give it a good stir, then cover the pot and let it cook for 2-3 minutes.
Step 5
Add the ground chicken, mix it in, then cover and cook for 3-4 minutes until the chicken is mostly cooked through.
Step 6
Finally, stir in the fresh ginger, chopped coriander leaves, garam masala, and cashew nuts. Give everything a good mix and cook for another minute or two before serving.
