Ingredients
- 2 ripe avocados, halved and pitted
- ½ small onion, minced
- 1 tablespoon fresh lime juice
- 1 jalapeno pepper, seeded and minced
- 2 tablespoons chopped fresh cilantro
- 1 clove garlic, minced
- ½ teaspoon kosher salt
- freshly ground black pepper to taste
- 1 Roma tomato, finely chopped
- 4 slices Texas toast
- 4 slices Havarti cheese
- 2 teaspoons butter, or to taste

Step 1
Mash the avocados in a big bowl. Then add the chopped onion, lime juice, jalapeño, cilantro, garlic, salt, and pepper. Give everything a good mix until it’s all well combined. Gently fold in the diced tomato last so it doesn’t get mushy.

Spread a generous amount of the guacamole onto two slices of bread. Lay two slices of Havarti cheese on top of each, then place the remaining bread slices over them. Don’t forget to butter the outside of each sandwich.

Heat a skillet over medium-high heat and cook the sandwiches until the bottoms turn golden brown—about 2 to 3 minutes. Flip them carefully and cook the other side until it’s just as crispy and golden, another 2 to 3 minutes.
