Why This Recipe Is So Loved
Cooking Techniques
- Avoid overmixing the meat to keep the loaf tender.
- Let the meatloaf rest for a few minutes before slicing to hold its shape better.
Step 1
Melt some butter in a pan, then add chopped onions and cook them until they’re soft and translucent. Stir in the garlic and cook for another 2-3 minutes until fragrant.
Step 2
In a large bowl, combine the chicken, egg, breadcrumbs, milk, salt, black pepper, paprika, garlic powder, soy sauce, and chopped coriander. Mix everything together well.
Step 3
Grease a baking tray with a little oil, then shape the mixture into a loaf and place it on the tray. Bake in a preheated oven at 180°C (350°F) for about 50-60 minutes.
Step 4
While the meatloaf is baking, mix together brown sugar, ketchup, and mustard in a small bowl to make the glaze.
Step 5
Once the meatloaf is cooked, spread the glaze evenly over the top and pop it back in the oven for another 10 minutes.
Step 6
Let it rest for a few minutes, then slice and serve warm. Enjoy!
