Why This Recipe Is A Must Try
Cooking Tips
- Grill the bread until it’s golden and crispy to add texture contrast.
- Drizzle honey just before serving to keep its delicate flavor and consistency.
Step 1
Gently heat your grill to medium-high and give the grates a quick brush with oil to keep things from sticking. Pour a teaspoon of olive oil onto a small plate, then roll the nectarine wedges around in the oil until they're all coated. Next, brush both sides of your bread slices with a couple of tablespoons of olive oil.
Step 2
Place the nectarines on the hot grill and cook them for about 1 to 2 minutes on each side until they get those nice grill marks. Once they're cool enough to handle, slice each wedge in half lengthwise so you end up with 16 smaller pieces.
Step 3
Now, put the bread on the grill and toast it for about a minute per side, just until you see those lovely grill lines and the bread is nicely crisped. Take the bread off and spread a generous layer of ricotta cheese on each slice.
Step 4
Top the ricotta with the grilled nectarine pieces, sprinkle on some almonds and fresh mint, and finish everything off with a drizzle of honey. Cut the toast in half, and it’s ready to enjoy!
