Step 1
Lightly heat your oven to 350°F (175°C). While it’s warming up, put the camote in a big pot and cover them with water. Toss in a pinch of salt and bring the water to a boil. Let the camote cook until they’re just tender but still hold their shape, about 10 minutes — be careful not to overdo it. Drain them well and then spread the camote out in a 9x13-inch baking dish.

In a separate bowl, mix together the pineapple, brown sugar, butter, and cinnamon until everything is combined. Pour this mixture over the camote and gently toss to make sure each piece is coated. Cover the dish with foil and pop it in the oven.
Step 3
Bake for about an hour until the camote is nice and soft and the sauce is bubbly. Take off the foil and bake for another 15 minutes to let the top get a little caramelized. Let it cool just a bit before serving and enjoy!
