Step 1
Put the pumpkin seeds into a container with a lid, then add the Worcestershire sauce, hot pepper sauce, bacon grease, and a bit of liquid smoke. Give it a good mix, seal the container, and let it sit in the fridge overnight so the flavors really soak in.

When you’re ready to cook, preheat your oven’s broiler and position the rack about 6 inches from the heat. Use a slotted spoon to scoop the seeds out of the marinade and into a bowl. Sprinkle in the cayenne pepper and garlic salt, then toss everything together until the seeds are nicely coated.
Step 3
Spread the seeds out in a single layer on a baking sheet and sprinkle a little extra salt on top. Pop the tray under the broiler and roast the seeds until they’re golden and toasted, which should take around 8 minutes. Make sure to stir or flip them a couple of times while they cook so they toast evenly.
