Ingredients
- 4 skinless, boneless chicken breasts, pounded to 1/2-inch thickness
- 2 cups Kansas City BBQ Sauce, divided (see below for recipe)
- ½ medium onion, thinly sliced
- 8 slices provolone cheese
- ¼ teaspoon Fresh cilantro or parsley

- Kansas City BBQ Sauce:
- 1 cup ketchup
- ½ cup brown sugar
- ¼ cup yellow mustard
- ¼ cup apple cider vinegar
- ¼ cup Worcestershire sauce
- 2 tablespoons honey
- 2 tablespoons dark molasses
- 2 teaspoons chili powder
- 2 teaspoons garlic powder
- 1 teaspoon liquid smoke
- 1 teaspoon onion powder
- 1 teaspoon crushed red pepper flakes
- ½ teaspoon salt
- ½ teaspoon black pepper

Practical Cooking Tips
- Preheat the grill to medium-high heat to get nice grill marks without burning the sauce.
- Brush on the BBQ sauce during the last few minutes of cooking to prevent it from charring.
Step 1
Blend all the sauce ingredients in a medium saucepan. Bring it to a boil, then lower the heat and let it simmer gently for about 10 to 15 minutes. Once done, take it off the heat and let it cool to room temperature—this usually takes around 15 minutes.
Step 2
Scoop out half a cup of the sauce and set it aside. Pour the rest into a large sealable bag, add the chicken breasts, seal it up, and pop it in the fridge to marinate for about half an hour.
Step 3
When you're ready, heat your grill to medium and lay out four 12x12-inch pieces of non-stick foil on the grates. Use tongs to move one chicken breast onto each foil square, then discard the marinade.
Step 4
Brush each piece of chicken with some of the reserved sauce, then pile on mushrooms and onions. Fold the foil up around the chicken and veggies, sealing them into packets. Let them cook on the grill for 10 to 12 minutes, or until the chicken is cooked through and the juices run clear—or check with a meat thermometer for 170°F.

Carefully open the foil packets and place two slices of provolone cheese on top of each chicken breast, resting over the mushrooms and onions. Close the foil loosely and let them cook uncovered for another 2 to 3 minutes, just until the cheese melts.
