Why This Meal Is A Winner
Chef Tips
- Avoid overmixing the batter to keep the bread tender.
- Check doneness by inserting a toothpick in the center; it should come out clean or with a few crumbs.
Directions
Heat your oven to 325°F (165°C) and grease two 4x8-inch loaf pans so the bread doesn’t stick. In a medium bowl, whisk together the flour, baking powder, cinnamon, baking soda, salt, and nutmeg. In a larger bowl, mash the bananas and then add the eggs, applesauce, brown sugar, flaxseed meal, milk, and vanilla extract. Mix everything until it’s well combined. Slowly add the dry ingredients to the wet mixture, stirring just until everything is blended. Fold in the walnuts gently so they’re spread throughout the batter. Divide the batter evenly between the two pans and pop them in the oven. Bake for about 45 to 60 minutes, or until a toothpick comes out clean when you test the center. Once done, let the loaves cool in the pans for about 15 minutes before carefully taking them out. Give them another 5 minutes to cool a bit more before slicing and enjoying.
