- 1 cup graham cracker crumbs

Step 1
Lin an 8-inch square pan with parchment paper, leaving some overhang on the sides to make it easier to lift out later. Pop the plant-based butter in the microwave for about 45 seconds until it’s melted. Then, mix in the powdered sugar, graham cracker crumbs, and half a cup of peanut butter until everything is well combined. Press this mixture firmly into the bottom of your prepared pan.
Step 2
Microwave the chocolate chips along with 2 tablespoons of peanut butter for 45 seconds. Give it a good stir, and if it’s not fully melted, keep heating in 20-second bursts, stirring in between until smooth. Pour this chocolate mixture over the peanut butter layer and spread it out evenly with an offset spatula or the back of a spoon.
Step 3
Pop the pan into the fridge and let it chill for about 30 minutes until the chocolate is set but still a bit soft. Lightly score the chocolate layer with a knife — this helps prevent cracking when you cut the bars later. Put it back in the fridge for another 30 minutes or so until it’s completely firm.
Step 4
When it’s ready, lift the whole thing out of the pan using the parchment paper edges and slice into bars. Enjoy!
