Why This Recipe Is So Delicious
Helpful Chef Tips
- Cook the minced meat on medium heat to keep it juicy and tender.
- Brush the flatbread with a little oil or butter before baking for extra crispiness.
Step 1
In a bowl, mix together the wheat flour, all-purpose flour, salt, and clarified butter. Gradually add lukewarm water and knead until you get a soft, slightly sticky dough. Add water little by little if needed. Drizzle in a tablespoon of oil, knead again, then cover and let it rest for about 10 minutes.
Step 2
After resting, divide the dough into 5 equal balls. Dip each ball into ¼ cup of oil and let them soak for around 15 minutes.
Step 3
While the dough is resting, heat some oil in a pan. Add the minced chicken and cook until it turns white. Stir in some ginger-garlic paste and cook for another minute or two.
Step 4
Season with salt, chili flakes, and cumin seeds. Then add chopped green chilies, red chilies, and onions. Cook everything together for a couple of minutes until the onions soften.
Step 5
Stir in chopped coriander, mix well, then turn off the heat and let the filling cool down a bit.
Step 6
To assemble, spread a little oil on your counter. Take one dough ball and flatten it gently with your fingers. Spoon the chicken mixture onto one side, then fold the dough over and seal it to form a ball again. Flatten it carefully to make your flatbread.
Step 7
Cook the flatbread on a hot pan, letting it brown on one side before flipping. Drizzle some oil and cook the other side until it’s golden and crispy. Enjoy!
