Chef's Cooking Tips
- Let the sauce simmer gently to blend the flavors well.
- Taste and adjust seasoning before serving for the best result.
Step 1
Bring a pot of water to a boil, then add the spaghetti and cook it until it’s almost done (about 90%). Drain and rinse with cold water to stop it from cooking further.
Step 2
Heat some oil in a pan over medium-low heat. Add the chopped garlic and onions, and sauté for 2-3 minutes until they soften.
Step 3
Add the minced chicken to the pan and cook for about 5-7 minutes, stirring occasionally. Season with salt, pepper, and chili flakes, and mix well.
Step 4
Pour in the vinegar, soy sauce, and chili sauce. Let it cook for a minute, then add the chicken stock and tomato paste. Stir everything together and let it simmer for 5-7 minutes until the sauce thickens.
Step 5
Once the sauce has thickened, stir in the chopped coriander leaves and take the pan off the heat.
Step 6
Serve the spaghetti on a plate, spoon the chicken sauce over the top, garnish with a little more coriander, and enjoy!
