Step 1
Heat your oven to 425°F (220°C). In a bowl or shallow dish, mix together the mirin, miso, soy sauce, brown sugar, and lime juice until well combined. Pop the salmon fillets into the marinade, making sure they’re nicely coated, and let them soak for about 15 minutes.

Heat a grill pan over medium heat and grease it lightly. Place the salmon on the pan, saving the marinade for later. Cook the fillets for 2 to 3 minutes on each side until you see some nice grill marks, then take them off the heat.
