Helpful Chef Tips
- Lightly toast the fennel seeds before adding them to release their natural oils and deepen their flavor.
- Check the loaf with a toothpick inserted in the center; if it comes out clean, the loaf is done baking.
Step 1
Pour the hot milk over the honey, maple syrup, and salt in a large bowl. Let it sit for a couple of minutes until it cools down to lukewarm. In a separate small bowl, mix the yeast with warm water and let it sit for about 5 minutes until it gets nice and frothy.
Step 2
Once the yeast is ready, add it to the milk mixture. Using an electric mixer, beat in 2 cups of flour along with the orange zest and fennel seeds. Then, mix in the butter until it’s well combined. Stir in the remaining 5 cups of flour to form a soft dough.
Step 3
Turn the dough out onto a floured surface and knead it for about 5 minutes until it feels smooth and elastic. Lightly grease a large bowl, place the dough inside, and turn it so the top is greased too. Cover the bowl and let the dough rise in a warm spot until it has doubled in size, which should take around an hour and a half.
Step 4
After it’s risen, gently punch the dough down and divide it into two equal pieces. Shape each piece into a loaf and place them in two greased bread pans. Cover again and let them rise until they’ve almost doubled, about 45 minutes.
Step 5
While the loaves are rising, preheat your oven to 350°F (175°C). Just before baking, brush the tops of the loaves with egg white to give them a nice shine.
Step 6
Bake the loaves for about 45 minutes, or until a toothpick inserted into the center comes out clean. Let them cool a bit before slicing and enjoying!
