Directions
Gently heat your oven to 300°F and lightly spray a large baking sheet with cooking spray. In a small saucepan, combine the peanut butter, oil, and honey. Warm it over low heat, stirring occasionally, until everything melts together into a smooth, pourable mixture. While that’s heating, pulse 1 cup of oats in a blender or food processor until they’re finely ground. Then, mix those ground oats with the rest of the oats, sugar, and salt in a big bowl. Pour the warm peanut butter mixture over the oat mixture and give it a good stir to combine everything well. Spread the mixture evenly on the prepared baking sheet. Pop it in the oven and bake for about 30 minutes, stirring every 10 minutes to make sure it cooks evenly. Once it’s out of the oven, let it cool for 10 minutes, then break it into chunks. Allow the granola to cool completely on the baking sheet before storing it in an airtight container. It should keep nicely at room temperature for up to a week.
