Directions
Tos the strawberries, oats, Greek yogurt, applesauce, egg whites, chocolate chips, almond milk, baking powder, cinnamon, almond extract, and a pinch of salt into a blender. Blend everything until you get a smooth batter that’s a little runny. Heat up a skillet over medium-high and give it a quick spray with some cooking spray. Pour about a quarter cup of the batter into the pan and let it cook until you see bubbles forming on top, which should take around 3 to 4 minutes. Flip the pancake carefully and cook the other side for another 2 to 3 minutes, until it’s nicely browned. Transfer the finished pancake to a rack to cool a bit, then keep going with the rest of the batter until you’re done. Enjoy!
