Step 1
Season the salmon with salt and pepper, then drizzle some lemon juice over it. Heat a large skillet over medium-high heat and add the butter and oil, letting them melt together. Once the pan is hot, carefully place the salmon in and cook for about 3 minutes, until the bottom is nicely browned. Flip the fillets and cook for another 3 to 5 minutes, until the salmon is almost cooked through.

Pour the rest of the lemon juice into one side of the pan. Add the mustard and dill, stirring them together. Pour in the cream and give everything a good mix, tilting the pan so the sauce spreads around the salmon. Let it cook for a few minutes until the sauce thickens up.
