Step 1
In a medium bowl, mix together the cream cheese, Cheddar, chopped pear, the white part of the scallion, salt, and pepper until everything is well combined. Spray a large piece of plastic wrap with cooking spray, then spoon the cheese mixture onto it. Use the plastic wrap to help you shape the mixture into a ball, wrapping it up tightly. Pop it in the fridge for at least an hour, or you can leave it in there for up to two days if you want to prepare ahead.
Step 2
When you’re ready to serve, toss the pecans and the green parts of the scallion together in a shallow bowl. Take the cheese ball out of the fridge and roll it around in the pecan mixture, pressing gently so the nuts and scallions stick to the outside. Then, it’s ready to enjoy!
