Directions
Heat your oven to 350°F and line a mini muffin pan with those tiny cupcake liners, about 1-1/2 inches wide. In a big bowl, mix together the pineapple (with its juice), cake mix, gelatin, eggs, water, and oil until everything is well combined. Use a tablespoon to scoop the batter into each lined cup, filling them up evenly. Pop the pan into the oven and bake for about 10 to 12 minutes, or until a toothpick poked in the center comes out clean. Once they're done, let the little treats cool completely on a wire rack. When they're ready, pipe some frosting on top to make a cute little flower and finish them off with a sprinkle of your favorite decorations.
