Directions
Preheat your oven to 350°F (175°C). While it warms up, rub the soaked cedar plank with half a teaspoon of butter to keep things from sticking. Take a paring knife and poke a few holes in the sweet potatoes, about half an inch deep. Pop them in the microwave on high for 8 to 10 minutes, or until they’re nice and soft. Once they’re cool enough to handle, peel them and toss the flesh into a bowl. Add 2 tablespoons of butter, Parmesan cheese, yogurt, and roasted garlic, then mash everything together until it’s smooth and creamy. Pile the mashed potatoes onto the cedar plank, spreading them out evenly. Slide the plank into the oven and bake for around 30 minutes, until the top is golden and slightly crispy. When they’re done, drizzle with a tablespoon of melted butter, season with salt and pepper, and sprinkle on parsley, onion, paprika, and the remaining Parmesan before serving.
