Directions
In a large bowl, mix together the ground beef, bread crumbs, milk, Cheddar cheese, egg, and dry onion soup mix until everything is well combined. Shape the mixture into a loaf on a cutting board. Place the trivet inside your Instant Pot and pour in half a cup of water. Set the meatloaf on top of the trivet, then close and lock the lid. Cook on high pressure for 15 minutes, allowing some extra time for the pressure to build up. When the timer goes off, carefully release the pressure using the quick-release method and then remove the lid. Meanwhile, preheat your oven’s broiler with a rack about six inches from the heat. Transfer the trivet with the meatloaf onto a rimmed baking sheet, brush the top generously with barbecue sauce, and broil for 3 to 4 minutes until the sauce is nicely caramelized. Let it rest for about five minutes before slicing and serving.
