Giv the black-eyed peas a good rinse, then season them with a bit of salt and pepper. Put the peas in the bottom of your Instant Pot, and add the chicken broth, diced tomatoes, ham, chopped red onion, and minced garlic on top. Secure the lid and make sure it’s locked in place. Choose the Bean setting or set your pressure cooker to high pressure, then set the timer for 30 minutes. It’ll take about 10 to 15 minutes for the pot to come up to pressure. Once the cooking time is up, let the pressure release naturally—this can take anywhere from 10 to 40 minutes. When it’s safe to open, give everything a good stir and enjoy!
