Directions
Lightly heat your oven to 435 degrees F (225 degrees C). Place a tortilla directly on a pizza stone and brush it with a tablespoon of olive oil. Sprinkle some oregano, salt, and pepper over the top. Then, layer on zucchini slices, tomato slices, spinach, olives, and a good handful of Parmesan cheese. Add a little more oregano, salt, and pepper, and sprinkle on some red pepper flakes for a bit of heat. Drizzle the rest of the olive oil over everything. Pop it in the oven and bake until the tortilla is nice and crispy and the cheese has melted, about 15 minutes. Once it’s done, take it out, slice it up, and enjoy!
