- 4 cups water, or as needed
- ¼ cup apple cider vinegar
- 1 tablespoon seafood seasoning (such as Old Bay®)
- 1 tablespoon olive oil
- 1 bunch collard greens, trimmed and cut into 2-inch strips
- 2 small jalapeno peppers, diced
- 3 cloves garlic, halved lengthwise, or more to taste
- salt and ground black pepper to taste

Directions
Fil a large pot halfway with water, then add the vinegar, seafood seasoning, and a drizzle of olive oil. Bring everything to a boil. Once the water is boiling, toss in the collard greens, jalapeño peppers, and garlic. Let it come back to a boil, then cover the pot and turn the heat down to medium-low. Let it simmer gently for 3 to 4 hours, or until the greens are really tender. When they’re done, drain off the water and mash the garlic cloves into the greens. Give everything a good stir, then season with salt and pepper to taste. Enjoy!
