Step 1
Put your potatoes in a big pot and cover them with salted water. Bring it to a boil, then turn the heat down to medium-low and let them simmer until they’re tender—about 20 minutes should do it. Once they’re soft, drain the water.

Transfer the potatoes to a large bowl and mash them up with a fork or masher. While they’re still warm, stir in the egg yolks, 2 tablespoons of butter, a pinch of nutmeg, and some salt. Mix everything until it’s smooth and then let the mixture cool for about 10 minutes.
