Directions
Heat your oven to 395°F (200°C) and lightly spray a muffin tin with some non-stick cooking spray. In a bowl, whisk together the eggs, milk, salt, and pepper until everything is well combined. Divide the tomatoes and green peppers evenly among the muffin cups, then sprinkle each with a bit of Colby-Jack cheese. Pour the egg mixture over the veggies and cheese, filling each cup all the way to the top. Gently stir each muffin cup with a fork to mix the ingredients a little. Pop the tin in the oven and bake until the tops are just starting to brown, about 20 minutes. When they’re done, let the bites cool in the pan for around five minutes before digging in.
