Directions
Stir the mayonnaise and Cajun seasoning together in a small bowl until it’s nice and smooth. Spread this spicy mayo on both slices of toasted bread. Next, heat a skillet over medium-high and place the andouille sausage cut-side down. Let it cook for about 2 minutes, then flip it and cook another 2 minutes until it’s nicely browned. Transfer the sausage onto one slice of bread, leaving a little gap between the two halves — this will help keep the egg from sliding off. Using the same skillet, add a bit of oil and warm it up over medium heat for about a minute. Crack an egg into the pan and let it cook without touching it for around 3 minutes. Carefully flip it with a spatula and cook for another 2 minutes until it’s done just right. Finally, place the fried egg on top of the sausage and close the sandwich with the other slice of bread.
