- 3 large sweet potatoes, peeled, cut into 1-inch chunks
- 12 ounces fresh cranberries
- ¼ cup finely chopped pecans

Directions
Heat your oven to 375°F. Lightly grease a baking dish, about 15 by 10 inches. In a big bowl, whisk together the oil, marmalade, apple juice, brown sugar, raisins, pumpkin pie spice, and curry powder until everything is well combined. Toss in the sweet potatoes, cranberries, and pecans, making sure they’re all nicely coated with the mixture. Spread everything evenly in the prepared dish. Pop it in the oven and bake for about 50 to 60 minutes, giving it a good stir now and then so nothing sticks and everything cooks evenly. When the sweet potatoes and cranberries are soft and tender, take it out and transfer to a serving bowl. Best enjoyed warm!
