Step 1
Tos the tofu with a tablespoon of oil, curry powder, salt, and pepper in a bowl. Let it sit and soak up the flavors for about 30 minutes. While the tofu is marinating, put the broccoli and carrot in a microwave-safe bowl with a splash of water and a pinch of salt. Cover it and microwave for around 2 and a half minutes until they’re just tender.
Step 2
Heat another tablespoon of oil in a wok or large pan over high heat. Throw in the spinach, onion, cucumber, radish, a pinch of salt, and a little nutmeg. Stir everything around until the spinach wilts, which should take about a minute. Then add soy sauce, honey, peanut butter, ginger, and some black pepper. Mix in the steamed broccoli and carrot, turn the heat down low, and cover the pan to keep everything warm.
Step 3
Now, cook the marinated tofu in a separate pan over medium heat. Pour in a tablespoon of soy sauce and cook for about 3 minutes until the tofu is warmed through. Once ready, add it to the veggies in the wok and give everything a good stir.
Step 4
Meanwhile, bring some water to a boil in a saucepan. Stir in the couscous, margarine, and garlic. Take the pan off the heat, cover it, and let it sit for about 10 minutes until the couscous soaks up all the water.
Step 5
To serve, spoon the couscous into bowls and pile the tofu and vegetable mixture on top. Sprinkle with pistachios for a nice crunch. Enjoy!
