Peel your garlic cloves and tossing them into a food processor. Pulse everything until the garlic is finely chopped and smooth. Sprinkle in some salt, then scrape down the sides with a spatula and pulse a few more times on low to keep it all coming together.

With the processor running on low, slowly drizzle in about 1 1/2 tablespoons of lemon juice.
