Why This Recipe Is So Enjoyable
Helpful Kitchen Tips
- Add noodles towards the end of cooking to keep them from getting too soft.
- Feel free to swap in any seasonal vegetables you have on hand.
Directions
Bring some water and a splash of olive oil to a boil in a pot over medium-high heat. Once it’s bubbling, toss in the noodles and cook them for about 3 minutes, giving them a stir now and then so they don’t stick. Next, pour in the vegetable broth along with the chopped carrot, and let everything cook together for another minute while stirring. Add the green bell pepper, celery, and a good splash of soy sauce, then bring the soup back up to a boil and let it cook for one more minute. Finally, sprinkle the chopped green onions over the top before serving.
