Step 1
Bring a large pot of lightly salted water to a boil. Once it’s bubbling, add the soba noodles and cook them uncovered for about 7 minutes, stirring now and then, until they’re tender but still a little firm. Drain and set aside.

While the noodles are cooking, mix together the soy sauce, oyster sauce, and mirin in a small bowl and set that aside.
